I’m Hungry: Nest Eggs

A little shout out to my sister Rachel who made this for her daughter’s birthday party last weekend. They were a big hit with the kids and adults alike!   

 

Ingredients:

2 cups sugar

3 tbsp cocoa

½ cup milk

1 tsp vanilla

2/3 cup butter

3 cups rolled oats

1 cup coconut

Mini eggs

To Prepare: In a medium saucepan, combine sugar, cocoa and milk.   Let boil for 5½ minutes, stirring frequently. Remove from heat and add vanilla, butter, rolled oats, and coconut.  Let cool slightly then press into sides and bottom of mini-muffin baking tins to resemble a nest shape. Add three eggs to each nest.  Let cool completely to harden nests.

Fun, easy and oh so yummy!

(p.s. you can use this same recipe but press them into a square cookie pan and let cool.  Cut into squares for a little fudge style treat!)
