This is one of our go to recipes when we're in a hurry, have a lot of left-overs or hardly any food in the house. It's so versatile and can be dialed up with spices or kept as plain as you like. It's similar to a chicken a la king style recipe – but with my mother's touch!
Her favourite has always been with shrimp and peas over frozen puff pastry. Over the years I've given it my own twist by adding carrots and curry and serve it over whole wheat english muffins. Either way you serve it – once you get the basics of the sauce, you can have fun experimenting with different ingredients to make it your own.
The Sauce: In a medium sauce pan, melt 2 tbsp of butter over medium heat. Sprinkle in 2 tbsp flour and stir to form a thick sauce or paste. Gradually stir in 1 cup of milk and bring to a slight boil stirring constantly until mixture thickens. Add cooked ingredients and simmer on medium-low heat until soft. Add a pinch of salt, pepper or any other spices that you like.
Try it with cooked and cubed chicken pieces, shrimp, scallops, seafood chowder mix and match it with some veggies like carrots, corn, green beans or peas. Play around with curry, dill, tabasco or basil to add some extra flavour. Then serve it over frozen puff pastries, toast, english muffins, brown rice or whole wheat pasta for a meal that's sure to please everyone!
